Three Ways to Enjoy Leafy Greens

 

As part of the new year’s resolutions to eat healthier, this usually means incorporating more leafy green vegetables into your diet. A quick trip to the grocery store during the first week of January will prove this to be true as the coolers with leafy green vegetables and salad mixes are almost empty. There are a variety of reasons why someone would want to eat more leafy greens to be healthier. They provide nutrients, can be easy to make, and are delicious! In today’s post, I’m sharing three ways I like to enjoy these green veggies by featuring Nature’s Greens products.

It doesn’t get much easier than a salad kit. The ingredients are included and all you need is a bowl and a fork, or just a fork if you want to eat it right out of the bag. This new Tangy Citrus Kale Yeah! Salad Kit includes sunflower seeds, dried cranberries, a mix of greens and other vegetables and dressing. You could always throw in some other ingredients if you want such as nuts or cheese, a meat-based protein like chicken or steak, or other vegetables or fruits. Nature’s Greens Kale Greens

It’s 2020 and kale is very much still a trendy green, probably due to its versatility. You can throw it in smoothies, use it as a base for a salad, or even sauté it. Kale is packed with vitamins like Vitamin A, Vitamin C, and Vitamin K. It is flavorful and the color is beautiful making for a very Insta-worthy photo opportunity. My favorite way to use kale is in my morning smoothie!

Serves: 1

  • 1 banana

  • ½ cup frozen pineapple

  • 1 cup kale

  • 1 cup milk of your choice

  • 1 tablespoon plain Greek yogurt

Nature’s Greens Collard Greens

A love for collard greens is a rite of passage in the south. I have to admit that I didn’t really like collard greens until I had the ones at Magnolia’s years ago and ever since, I have found myself ordering them at restaurants and now making them at home. Collard greens contain vitamins and minerals like Vitamin A, Vitamin C, calcium, and fiber. My favorite way to make collard greens is to cook them on the stovetop!

Southern Collard Greens Recipe

Serves: 4-6

  • 6-8 collard leaves

  • 1 tablespoon butter

  • ¼ cup vinegar

  • 1 tablespoon salt

  • 1 tablespoon hot sauce

Bring water to a boil on stove top. Add salt and hot sauce to pot. Add in collard greens and butter. Cook until done, approximately 45 minutes, and add seasoning as desired such as additional salt, hot sauce, and vinegar.
