Balsamic Brussels Sprouts
1 lb. Brussels Sprouts
Salt & Pepper
*Salt, pepper, balsamic vinegar, and olive oil do not have exact measurements.
Cut off bottom stem, cut in half, and remove outer leaves, if needed. Coat with salt, pepper, balsamic vinegar, and olive oil. Roast at 400 degrees for about 30 minutes. Stir about halfway through to ensure even cooking.
Sweet Potato Apple and Brie Toast
2 large sweet potatoes
1 wedge of brie cheese
3 large apples of a sweet variety
1 cup of arugula
2 tablespoons honey
1-2 tablespoons of cinnamon
Cut the sweet potatoes in slices and cook for about 40 minutes at 400 degrees. Remove from oven and spread brie on sweet potato slices. Allow brie to melt some for easier spreading. Top with apple slices and drizzle with honey. Add arugula and cinnamon as desired.
