Salmon, Red Potatoes, and Green Beans
Filet of salmon (wild caught preferred)
1 teaspoon honey
Juice from fresh orange
1 teaspoon seasoning salt
1 tablespoon Everything but the Bagel seasoning from Trader Joe's
Fresh Green Beans
1 tablespoon butter
Season the salmon with a drizzle of honey, juice from the fresh orange, and seasoning salt. Cook until it reaches a minimum temperature of 145 degrees.
Wash the red potatoes, cut them into smaller pieces and season with a salt, pepper, Everything but the Bagel seasoning from Trader Joe's, and a drizzle of olive oil. Cook for approximately 30-40 minutes at 350 degrees.
Wash the green beans and remove the tips. Add to pot with about 3-4 cups of water. Bring water to a boil. Add 1 tablespoon of butter to the pot and add a dash of salt, pepper, and sugar. Cook until tender.
4 bell peppers- 1 green, 1 yellow, 1 orange, 1 red
1.5 lb boneless, skinless chicken breast cutlets
Whole wheat tortillas
Plain Greek yogurt
Slice peppers and lightly coat with olive oil, salt, and pepper. Cook on low heat until tender.
Lightly coat chicken with olive oil, salt, and pepper. Cook at 400 degrees until it reaches an internal temperature of at least 165 degrees. Shred or chop chicken.
Heat tortilla, if desired. Fill tortilla with chicken, peppers, shredded cheese, and Greek yogurt (in place of sour cream).
