Orange Creamsicle Bars
6 sheets of graham crackers
3 Blood Oranges
8 oz cream cheese
4 tablespoons plain Greek yogurt
3 tablespoons orange cream yogurt (Greek preferred)
3 tablespoons butter
2 tablespoons sugar
Blueberries to top (if desired)
Bring cream cheese to room temperature.
Crumble graham crackers and place in a medium sized bowl. Melt butter and add to bowl with graham cracker crumbs. Place graham cracker crust in bottom of baking dish (square dish that is approximately 8 inches is best). Cook at 300 degrees for 10-12 minutes. Set aside.
Squeeze or use juicer to produce 1/2 cup of juice from the blood oranges. Set aside.
Mix cream cheese with hand mixer or stand mixer until smooth (about 1 minute). Mix in plain Greek yogurt and orange cream yogurt until smooth. Add in the eggs, juice from the blood oranges, and sugar.
Once smooth, pour in orange cream mixture over graham cracker crust.
Bake at 300 degrees for ~35 minutes until the orange cream mixture has thickened. Remove from oven and let stand for 30 minutes. Place in refrigerator to chill for at least 3 hours or overnight.
Top with other fruit such as blueberries, as desired!
